I doubled the cheese and added a little cream cheese to the vegetable mixture. I also added in some Italian seasoning. It came out great and everyone loved it! It’s easy to make changes to this recipe and still have it come out well.

Easy to make and very tasty. Though I used olive oil, it was still hard to get each one out of the pan. I would make again.

These yummy mini-frittatas are a terrific way to start the day. I ran out of milk so I used sour cream - so good!

I substituted broccoli for spinach as that is what I had on hand and I ended up baking for 22 minutes. They puffed up nicely and had a nice consistency. A bit more salt next time for my taste, but otherwise great!

It was delicious and lots of possibilities for the future. You can do this ahead of time and just put it in at the last moment. NO fuss.

Made these last nigiht...had half for dinner which I cooked in a pan on the stove and the rest ladled into muffin tins - absolutely delicious...had some feta cheese left over from a salad I made so threw that in and think it added a bit of zip. This is a versatile recipe and will definitely make it again.

Easy to make and Delicious! Served at a brunch and was a success! Will make again. Also would work well to change up the veggies!
