- 1/4 cup white onion (finely chopped)
- 1/4 cup chopped cilantro
- 1/4 cup mild olive oil (or vegetable oil)
- 1 white onion (medium, halved and thinly sliced lengthwise)
- 3/4 lb. button mushrooms (or mixed, trimmed and sliced)
- 2 jalapeño chiles (fresh, thinly sliced; including seeds)
- 1/4 tsp. fine salt (or 1/2 teaspoon Kosher salt)
- 1 1/2 lb. spinach (2 large bunches, stems discarded; and leaves well rinsed and spun dry)
- lime juice (Freshly squeezed, to taste)
- 3 lb. tomatoes (about 10 medium)
- 2 mora chiles (chipotle, purplish-red color, wiped clean and stemmed)
- 1/2 habanero chile (fresh, stemmed; including seeds)
- 3 garlic cloves (small, peeled)
- 1 tsp. fine salt (or 2 teaspoons Kosher salt)
- 1/2 tsp. sugar
- 1/4 cup mild olive oil (or vegetable oil)
- 1 white onion (medium, thinly sliced)
- 1 piece canela (1/2-inch) or 1/8 teaspoon ground cinnamon)
