- 1 sprig thyme
- 1 bay leaf
- 2 stalks parsley
- 50 grams carrot (peeled and finely diced)
- 30 grams red onion (peeled and finely diced)
- 1 rib celery (finely diced)
- 6 grams salt
- 2 Tbsp. red wine vinegar
- 3 grams sea salt (or kosher salt, plus more as needed)
- 1 tsp. Dijon mustard
- 1/3 cup olive oil
- 50 grams shallot (peeled and minced)
- 3 grams freshly ground black pepper
- 20 grams lemon juice (freshly squeezed)
- 1/2 cup fresh flat leaf parsley (finely chopped)
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. cayenne pepper
- 1/4 tsp. ground cloves
- 1/4 tsp. grated nutmeg (freshly)
- 1/4 tsp. ground cinnamon
- 1/2 cup walnuts (or pecans, toasted and coarsely chopped)
- 1 cup baby spinach
- 100 grams crumbled goat cheese
- 1/4 cup golden raisins
- 12 oz. grape tomatoes
- 1 Tbsp. cream
- 2 naan bread (Indian, Store bought or homemade)
