I only had fresh spinach (a salad bag full) I cooked it down with some olive oil and chopped it up. I just greased my tin because I didn't have cupcake holders and put muffin mix in directly. These came out perfect!! I also used reduced fat crumbled feta. I will be making these again, so good!! Cooked at exact time and heat mentioned in recipe
