- 5 oz. cheese tortellini (’s, I used half of a 10 oz. package, which you can freeze and save for later)
- 3 cups spinach (Stems removed and roughly chopped)
- 4 cloves garlic (minced)
- 2 medium carrots (sliced)
- 1 medium onion (diced)
- 5 cups low sodium vegetable broth (/Water, I typically use 4 cups of broth and 1 cup of water)
- 3 Tbsp. unsalted butter
- 1/4 cup all purpose unbleached flour
- 1/2 tsp. Italian seasoning
- 1 pinch red chili flakes
- 1/2 cup milk (Half and Half)
- 1/4 cup grated Parmesan cheese

This soup is scrumptious! So easy to make, with the simplest of ingredients and it comes together in less than half an hour. I used half vegetable broth and half chicken broth. I didn’t have unsalted butter, so I used regular butter and omitted extra salt. It’s not too brothy or too creamy. It’s just perfect. Thank you so much for this delicious recipe! Next time I’ll add some chicken for some added protein. But honestly, it’s filling just as is. And adding the Parmesan at the end just brings it all together!!

It was so delicious! I added kielbasa sausage, potatoes and kale. So hearty and hit the spot on a rainy day.

Delicious. Am followed recipe as is except I prepared it for a single serving. I don't care much for leftovers and this soup is so easy to prepare that I don't mind making it from scratch each time.

I love this soup. It is so easy and doesn't use alot of ingredients. So comforting on a rainy cold day. Ive told my family when they are sick with a cold and they eat this soup it will make them better and it really does!

Great, even though I subbed 2% milk for the half & half. I also added 1tbsp turmeric for anti-inflammatory benefit & a bit more pizazz. Threw in some left over grilled chicken too (why not.?]
