- 1 onion
- 3 cloves garlic
- 1 Tbsp. olive oil
- 2 cups ricotta
- 1 cup spinach (chopped, measure after thawing frozen spinach and squeezing water out)
- 1 cup Parmesan (plus more for serving)
- 1/2 cup mozzarella
- 1 can artichokes
- 1 tsp. red pepper flakes (each:, salt, pepper)
- 2 eggs (lightly beaten)
