- 2 Tbsp. vegetable oil (I used Indian sesame oil)
- 1 red onion (diced)
- 5 green chilies (diced)
- 1 tomato (diced)
- 3 curry leaves (roughly chopped)
- 1 Tbsp. minced garlic (and ginger)
- 1 tsp. mustard seeds (each)
- 1 pinch fenugreek seeds
- 1 tsp. cumin powder
- 2 tsp. coriander powder
- 50 grams yellow split peas (soaked in water minimum for 1hour, washed and drained)
- 1 vegetable soup (cube)
- 1 Tbsp. fenugreek leaves (dried, from Indian stores optional)
- 500 mL water
- 400 mL milk (or 200ml coconut cream mixed with 200ml water)
- 4 Tbsp. yoghurt (low fat, optional)
- 1 pinch turmeric powder
- 100 grams spinach leaves (roughly chopped)
- salt (to taste)
- 1 Tbsp. lemon juice
