- 2 Tbsp. oil (divided, I like to use 1 Tbsp each of coconut oil & sesame, or olive oil)

- carrot (swirls,, use vegetable peeler)
- scallions (sliced)
- lettuce (Purple, thinly sliced)
- cucumber (swirls, use vegetable peeler)
