- 1 cup quinoa (dry truRoots organic, 4 cups cooked)
- 1 tsp. olive oil
- 1 red onion (small, finely diced, about 1 1/4 cup)
- 16 oz. frozen spinach (thawed, can thaw in fridge overnight, on the counter for a couple hours or follow package directions)
- 14 oz. artichoke hearts (about 1 1/2 cups - drained and chopped)
- 15 oz. chickpeas
- 3 garlic cloves (minced)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 batch vegan Parmesan cheese
- 4 Tbsp. olive oil (avocado or grapeseed will work, or vegan butter)
- 5 cloves garlic (minced, about 2.5 Tbsp)
- 1/4 cup arrowroot starch (organic cornstarch or GF all purpose flour should also work; if not gluten free, can sub regular all purpose flour)
- 2 cups almond milk (unsweetened plain)
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
- 1/3 cup nutritional yeast
- 1/2 cup vegan Parmesan cheese (see casserole ingredients)
