  • 1/2 boneless, skinless chicken breast
  • 1 1/2 cups spinach (washed and torn)
  • 2 tablespoons corn kernels (cooked)
  • 1 tomato (chopped)
  • 1/4 avocado
  • 2 tablespoons goat cheese
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon rice vinegar
  • salt
  • ground black pepper
  • 1 tablespoon olive oil

    Directions

    1. Saute or grill the chicken in a pan on medium heat until it is done. Set aside and allow to cool for 5 minutes. Cut the chicken into cubes and add to a bowl.
    2. Add the spinach, corn, tomato, avocado, and cheese to a bowl and toss well.
    3. Add the mustard, vinegar, and a pinch of salt and black pepper to a small bowl and mix well. Slowly drizzle the oil into the bowl, whisking as you do,
    4. Arrange the salad on a plate, pour the dressing onto the salad, and serve.
