- 1 cup walnuts (soaked for 1 hour & drained, optional, you may skip soaking if you prefer a crunchier texture)
- 1 can lentils (drained & rinsed)
- 1 carrot (shredded)
- 1 Tbsp. chia seeds
- 1 cup cilantro (chopped)
- 3 tangerines (peeled & wedges divided)
- 1 orange zested (large, & juiced)
- 2 Tbsp. white wine vinegar
- 2 Tbsp. maple syrup
- 1 clove garlic (peeled, mince if you do not have a high powered blender)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
