- 1 pie crust (prepared for a 9-inch deep dish pie plate and pre-baked, I used a frozen Marie Calendar crust)
- 3 large eggs
- 1 cup cream
- 1/2 cup milk (whole or 2% reduced-fat)
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 tsp. olive oil
- 1/2 red onion (medium, halved and thinly sliced, about 1/2 cup, yellow onion works well too)
- 1 clove garlic (minced)
- 4 oz. fresh spinach (coarsely chopped, about 4 cups)
- 2/3 cup gruyere (shredded Comté, Emmental, Fontina or aged Cheddar cheese)
