- 2 Tbsp. grated Parmesan cheese (freshly)
- 1 pinch salt (and Pepper)
- 4 pieces crusty bread (I like sourdough)
- butter
- 6 slices smoked gouda (could do a mix of gouda and mozzarella too)
- 1/2 cup baby spinach
- pesto (prepared spinach)
