I altered the recipe quite a bit sautéed onions and garlic, added mushrooms and after mushrooms had cooked, added about 1/3 c of white wine I also used black beans and walnuts and let them cook before adding the spinach I wasn’t happy with the color so I added a small can of diced tomatoes after draining them I used about a teaspoon of homemade taco seasoning and used tomatillo sauce rather than red enchilada sauce
