- 3 garlic cloves (minced)
- 2 Tbsp. olive oil
- 2 cups cooked chicken (shredded)
- 1 can artichoke hearts (in water, drained and roughly chopped)
- 1/4 cup all-purpose flour
- 1/2 cup dry white wine
- 32 oz. chicken broth
- 12 oz. evaporated milk
- 8 oz. fresh spinach (roughly chopped)
- 2/3 cup grated Parmesan
- black pepper
- salt
- 4 oz. cream cheese (optional)

Directions
- 1. Sauté onions and garlic in oil in a large soup pot over medium heat until onions are soft, about 3-4 minutes.
- 2. Add artichokes; sauté 2 minutes
- 3. Stir in flour and cook for 2 minutes, stirring continually
