- 2 cups milk (I used unsweetened almond milk)
- 1 Tbsp. cornstarch
- 2 cups artichoke hearts (coarsely chopped*)
- 11 oz. spinach (package, 4 large handfuls)
- 1/2 cup Parmesan cheese (shredded)
- 3/4 cup cheese (white cheddar, mozzarella, shredded & divided)
- 1/2 tsp. salt (+ a pinch)
- 1/2 tsp. ground black pepper
- cooking spray (I use Misto)

Needs some more spices...too bland for me. Had to add a lot of salt and pepper. Maybe if i try it again, i will add some red pepper flakes.

So good! Made it for the first time back in May and has been in heavy rotation ever since. I’m a sucker for anything and everything spinach and artichoke.

It's okay. I didn't follow the recipe exactly and added nutmeg and black pepper. But I don't find it to be very filling and it definitely does not serve eight people as a main dish

I loved this! I added some celery while cooking the onions. I added more spinach than the recipe called for and used some horseradish cheddar for the cheese. Really tasty!

Fantastic, healthy, filling, and easy to cook! I thought it needed a tad more salt but that's matter of opinion and I used Himalayan Sea Salt.
