I used cottage cheese instead of ricotta and added artichoke hearts. So good! Only had to cook for 15 min.

I had two 8 oz containers of baby bellas, so
I used those instead. Put some olive oil and wiped it all over bottom. Lined a 9x13 with portobello caps. Sautéed fresh spinach, onions, red peppers. Stored together 16 oz ricotta and 1 cup cottage cheese (left overs) and added 2 tsp of dried Italian seasoning. And 1 tsp garlic salt. Spread ricotta mix over portobello caps, then spread sauté mix (next time I'd go with more than 10 oz of fresh!)
Also added 2 cups of small cooked macaroni sprinkled between ricotta and spinach layers, then shredded moz and park mix - about 1 cup, then added about 2 oz of fresh mozzarella cut in cubes and sprinkled throughout.
Next time- I'd put parmesan and shredded moz under the spinach later and then dot top with more fresh mozzarella. It melted to more of a patty of cheese instead of melting throughout.
Great meal!! Had it as main course!

Fantastic! i have also tried it with artichoke hearts subbed for spinach and it was equally incredible.

Very good! I made quite a few alterations. I added some Parm in the ricotta, sauteed the veg in garlic, chives and chili flakes and topped with just a little panko. It was fabous and very flavourful!

I thought it needed dill weed and maybe feta cheese as well. I'll definitely try it again though.

A great meatless dinner that's satisfying and filling. I did not make any changes and I loved it. Have made this recipe multiple times
