- 1 pork knuckle (1 inch cubes)
- pork sausage (As needed basic, cut into 1 ½ inch pieces)
- fresh bay leaves (As needed)
- kosher salt (As needed)
- black pepper (As needed, ground)
- 1 lemon (charred and juiced)
- 1 cup honey
- 2 cups balsamic vinegar
- 1 cup olive oil
- 1 red onion (thinly sliced)
- 3 kiwi fruit (chopped)

Directions
- 1. Combine marinade ingredients
- 2. Add pork knuckle to marinade and let sit overnight
- 3. To assemble skewer alternate fresh bay leaves, Pork Knuckle, and sausage using 3 pieces of each
- 4. Season with salt and pepper and grill until pork is cooked through
- 5. Finish with charred lemon juice and olive oil
