- 2 cms fresh ginger (| 1in, peeled and chopped)

- 2 Tbsp. honey
- 1 Tbsp. brown sugar
- 1 Tbsp. thyme leaves (fresh, or dried)
- 2 tsp. allspice
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground cardamom
