- 3 Tbsp. olive oil (divided)
- 1 lb. boneless skinless chicken breast (cut into ½-inch chunks)
- 1 1/4 cups onions (chopped, divided)
- 14.5 oz. no salt added diced tomatoes
- 15 oz. white beans
- 1 Tbsp. chili powder
- 1 tsp. cumin (dried)
- salt
- 2 cups mixed greens

Directions
- Add 1 Tbsp. oil to a large heavy skillet. Heat over medium-high heat until oil is hot.
- Add chicken cubes and 1 cup onions (reserve remaining onions for topping). Cook for 5 to 6 minutes or until chicken is cooked through and onions are soft.
- Stir in tomatoes, beans and seasonings. Cover and bring to a boil, reduce heat immediately and simmer for 10-12 minutes.
- Ladle into bowls and top each portion with 1 Tbsp. chopped onions.
- Combine greens with remaining olive oil, salt and pepper.
