- 1 Tbsp. olive oil
- 1 brown onion (large, 180g or 1 ½cups of the chopped onion finely chopped)
- 1 large carrot (70g or ½ a cup of the chopped carrot peeled then chopped)
- 1 stalk celery (⅓ of a cup of chopped celery finely chopped)
- 2 cloves garlic (minced)
- 1/4 tsp. chilli flakes (dried red)
- 1/8 tsp. cayenne pepper
- 1/2 tsp. dried oregano
- 1 tsp. ground cumin
- 1 handful leaves (fresh coriander, cilantro, removed and the stems finely chopped)
- 1 Tbsp. tomato puree (paste)
- 400 grams tomatoes (chopped, diced)
- 1 liter vegetable stock (made with 2 stock cubes)
- 150 grams red lentils (dried)
- 2 bay leaves (dried)
- 1/4 tsp. sugar
- 1/2 tsp. sea salt
- 1/4 tsp. freshly cracked black pepper
