- 4 sweet potatoes
- 2 Tbsp. maple syrup
- 3 Tbsp. butter
- 1/4 cup sliced almonds
- 1 tsp. chipotle chilies (diced, in andouille sauce)
- beef bouillon cube
- 2 Tbsp. flour
- 2 cups pasta (cooking water)
- whole wheat pasta (angle hair)
- feta cheese (for garnish, optional)

Directions
- Roast sweet potatoes in an oven at 425 for 45 min. Peel the skin off and place in a food processor with the maple syrup. Dice until smooth
- Cook pasta and reserve 2 cups of cooking water
- Toast almonds in 2 tbsp EVOO until browned, then add the diced chilies and 1-2 tsp of the andouille sauce
