- 1/3 cup peanut butter (smooth or crunchy both work)
- 1 Tbsp. peeled fresh ginger (chopped)
- 1 Tbsp. soy sauce
- 2 Tbsp. honey
- 2 tsp. crushed red pepper (cayenne)
- 2 garlic cloves (minced)
- 6 oz. snow peas (fresh, ends removed)
- 12 oz. boneless skinless chicken breasts
- 5 cups soba (cooked, about 10 ounces uncooked buckwheat noodles)
- 1/2 cup sliced green onions (about 4)
- 1/2 cup unsalted dry roasted peanuts (chopped)
