Very good and adaptable recipe. I opted to do something different on assembly.
Use a muffin tin for small muffins. Line it with plastic wrap, pushing it down into the muffin wells. Put a slice of salmon in each muffin well followed by diced cucumber, scallions or whatever you want. Then press in each well a scoop of rice. Pack it good!
Then put a cutting board on top and flip the whole thing over, pull off the muffin tin and you end up with small balls similar to nigiri sushi. They are also already covered with plastic wrap and ready to refrigerate or serve. It also avoids the need for the nori.
