Description
Plenty of black pepper, a couple of kinds of chili, and smoked paprika give these succulent ribs loads of personality. Add your favorite bottled barbecue sauce and let the slow cooker work its magic. No messy grill to contend with, just honest-to-goodness barbecue flavor that is sure to please. Pass the paper towels and dig in! The recipe is a Yummly original created by Roxanne Wyss and Kathy Moore of The Electrified Cooks.

- nonstick cooking spray (or a little vegetable oil)
- 3 1/2 lb. baby-back pork ribs (you can use 3 to 4 lb.)
- 2 Tbsp. yellow mustard
- 2 Tbsp. brown sugar
- 1 Tbsp. smoked paprika
- 2 tsp. coarsely ground black pepper
- 1 tsp. chili powder
- 1 tsp. chipotle chili powder (optional; omit if you’d like the ribs less spicy)
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1 1/4 cups barbecue sauce (tomato-based, plus more for serving, if you like)
- 2 Tbsp. cider vinegar
- 1/4 tsp. cayenne pepper

Directions
- Spray a 6-qt. slow cooker with cooking spray. Cut ribs in half or thirds so they’ll fit in the slow cooker. Set ribs out on a sheet pan or a work surface with the meaty side up and brush meaty side with mustard.
- Stir together brown sugar, paprika, black pepper, chili powder, chipotle chili powder, garlic powder, and salt in a small bowl. Sprinkle rub generously on the mustard-coated side of the ribs and press lightly to adhere. (Store any leftover rub in an airtight container up to 2 months and save to season beef, pork, or chicken.)
- Place ribs in slow cooker with the seasoned side up, stacking them offset a bit. Combine barbecue sauce, vinegar, and cayenne in a small bowl. Drizzle sauce evenly over a portion of ribs at a time, lifting them as needed so the sauce is evenly distributed.
- Cover slow cooker and cook ribs on Low until the meat is tender when pierced with a fork and it pulls from the bones about 1/2 inch at the top of a rack, 5-7 hours.
- Transfer ribs from slow cooker to a platter (discard liquid from slow cooker) and cut into serving-size portions. Drizzle ribs with additional barbecue sauce, if you like.
