Description
Skip lugging a pot of water to the stove with this quick, one-skillet gnocchi recipe. Fresh or shelf-stable gnocchi need just a quick saute to brown and warm. In the same pan, saute some spicy sausage and mushrooms. Finish the dish with fistfuls of baby spinach for a shot of greens, and then add Parmesan, because Parm makes everything great. The recipe, which makes 7 cups, is a Yummly original created by Ivy Manning.

- 3 Tbsp. extra-virgin olive oil
- 20 oz. potato gnocchi (fresh or shelf-stable, 2 pkg.)
- 12 oz. hot Italian sausage (bulk, or 3 sausages, casings removed)
- 1 small onion
- 8 oz. sliced cremini mushrooms (or buy whole cremini mushrooms and slice them)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3/4 cup chicken broth
- 5 oz. fresh baby spinach (4 cups packed)
- 1/2 cup grated Parmesan cheese (plus more for serving)

Directions
- Heat olive oil in a 12-inch nonstick frying pan over medium-high heat. Add gnocchi and cook, stirring frequently, until gnocchi are golden brown all over, about 5 minutes. Pour gnocchi into a bowl, cover, and set aside.
- Add sausage to the pan and cook over medium-high heat, breaking up meat with a wooden spoon, until it’s cooked through, about 4 minutes.
- Meanwhile, cut onion in half lengthwise, then slice crosswise.
