- 3/4 cup water chestnuts (canned whole, blanched in boiling water for 10 seconds, refreshed under cold running water, drained, blotted dry, and chopped)
- 2 1/2 Tbsp. fresh ginger (peeled and minced)
- 2 1/2 Tbsp. scallion (minced, whites)
- 2 1/2 Tbsp. soy sauce
- 1 1/2 Tbsp. rice wine (or sake)
- 2 1/2 tsp. toasted sesame oil
- 1 1/2 Tbsp. cornstarch
- 50 wonton skins
- cornstarch (as needed)
- 8 cloves garlic (peeled)
- 2 squares fresh ginger (knobs, peeled)
- 1 tsp. crushed red pepper
- 6 Tbsp. sesame paste (Chinese toasted, mix well before adding)
- 1/4 cup toasted sesame oil
- 5 Tbsp. soy sauce
- 1/4 cup rice wine (or sake)
- 1 1/2 Tbsp. chinese black vinegar (or Worcestershire sauce)
- 1 1/2 Tbsp. sugar
- 6 Tbsp. chicken broth (or water)
