  • 2 bunches broccolini
  • 1 tablespoon sunflower oil
  • 3 centimeters ginger (piece, 15g, peeled, finely chopped)
  • 1 garlic clove (crushed)
  • white sesame seeds (Toasted, to serve)
  • 1/3 cup light soy sauce
  • 4 cups vinegar (black, chinkiang, from Asian food shops)
  • 2 tablespoons chilli sauce (spicy, we used Lao Gan Ma Spicy Chilli Crisp sauce – from Asian food shops)
  • 3 teaspoons caster sugar
  • 1 red chilli (long, thinly sliced)
  • 1 spring onion (thinly sliced)

    I didn't make the sauce but the noodles are too think and starchy for me

    The sauce is really delicious and authentic, must use the black vinegar. also, the broccolini really balances the flavor.
