- 1 1/2 lb. shrimp (medium wild, peeled, deveined, rinsed with water & patted dry, keep the tails on)
- 2 Tbsp. spice (Hunter Organic Seasoning Mix Spicy Taco, divided)
- cayenne pepper (to taste, optional)
- 2 Tbsp. extra virgin olive oil (cold-pressed, divided)
- 6 cloves crushed garlic
- 1 whole lime
- 2 shallots (finely chopped)
- 1/2 cup diced tomatoes (BPA-free, such as Eden Organic brand, drained)
- 3 cups kale (chopped)
- 1 cup corn (frozen organic, thawed)
- 1/2 cup pitted green olives (chopped, for the best-tasting olives look for fresh olives in your supermarket olive bar)
- 14.5 oz. white beans (BPA-free, or pinto beans, rinsed and drained)
- 2 cups red rice (cooked whole grain, black rice or short grain brown rice)
- hot sauce (such as Tobasco, optional)

Delicious! I did do couple of variations, instead of just the shallots and garlic, I used Louisiana Choice Creole Seasoning mix (bell pepper, onion, celery, garlic,adds a little more taste. I also used fresh Louisiana boiled shrimp and of course Louisiana crawfish, do not skimp and use Chinese crawfish, they are basically raised in sewers and smell and taste like it.
