  • 1 teaspoon turmeric powder
  • 3 bay leaves
  • 1 teaspoon Panch Phoron (indian 5 spice)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 3 onions (medium)
  • 80 milliliters oil
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons minced ginger
  • 5 teaspoons salt
  • 2 teaspoons chilli powder
  • 2 teaspoons curry powder (mixed)
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 can sweetcorn
  • 4 teaspoons pickle (Mr Naga, optional, if you want it extra spicy)
  • spring roll pastry (I use Tyj brand and cut it myself)
  • 1 egg (whisked, to seal the samosas, alternatively make a paste using 3 tsp of plain flour and a little water to seal)
