  • 1 tablespoon olive oil
  • 1 onion (medium, finely chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon dried chili flakes
  • 1/2 cup dry white wine
  • 14 ounces tomato soup (cans)
  • 1 pound mixed seafood
  • parsley (chopped, to serve)
  • lemon wedges (to serve)

    Directions

    1. Heat oil in a large saucepan on high. Sauté onion and garlic 2-3 minutes, until tender. Add chili flakes and cook, stirring, 1 minute.
    2. Mix in wine and bring to a boil. Boil, uncovered, until liquid is reduced by half.
    3. Stir in soup and 2 cups water. Bring to a boil. Reduce heat to medium and stir in seafood mix. Season to taste.
    4. Simmer, covered, 3-5 minutes, until seafood is cooked. Serve sprinkled with parsley and accompany with lemon wedges.
