- 1 bell pepper (diced)
- 1 cup tomato (seeded and diced, can use grape or cherry tomatoes as well as plum or beefsteak)
- 1/2 English cucumber (diced)
- 2 cups cooked quinoa (cooked per package directions; remove lid and cool to room temperature)
- 12 oz. chicken sausages (spicy, like Aidell's or Casual Gourmet, cooked)
- 1 Haas avocado (peeled, seeded and sliced)
- 1 handful cilantro (for garnish, optional)
- 1 lime zested (and juiced)
- 2 cloves garlic (minced)
- 1 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1 pinch cayenne pepper
- 1 tsp. cumin powder
- 1/2 tsp. chili powder
- 1/2 cup olive oil
- 1/4 cup cilantro (chopped)
