- 4 sweet potatoes (small, or 2 large, cut into chunks, if organic keep skin on!)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ras el hanout (if on hand or make your own)
- 1/2 tsp. chili flakes (or more or less – depending how spicy you like it)
- black pepper
- sea salt
- 1 cup black rice (preferably soaked overnight)
- 1 knob fresh ginger (about the size of your thumb, peeled)
- 1 cinnamon stick (or 1/2 teaspoon ground cinnamon)
- 3 pieces orange zest (organic)
- 1 pinch salt
- 2 cups water
- flat-leaf parsley
- cilantro
- 1/3 cup toasted slivered almonds
- 3 Tbsp. toasted sesame seeds
- 1/4 cup dates (pitted and chopped)
- 1 orange
- 1/4 cup extra virgin olive oil
- 1 tsp. sesame oil (cold pressed organic)
- 2 Tbsp. tahini paste
- 1 pinch sea salt
- water (to thin, if needed)
- 3 cups mesclun greens (winter)
