- 2 lb. carrots (scrubbed and halved lengthwise)
- 1 avocado (peeled and thinly sliced)
- 2 Tbsp. flavored vinegar (tarragon)
- mustard greens (or other bitter green)
- 2 tsp. kosher salt
- 1 Tbsp. boiling water
- 4 oz. goat cheese (softened and crumbled)
- 2 Tbsp. milk (or cream, optional)
- 1 bunch watercress (washed and trimmed of thick stems)
- 2 slices rustic bread (toasted, cut into 1-inch cubes)
