- 1 onion (medium, diced)
- 1/2 tsp. sea salt
- 8 cloves garlic (minced)
- 1 sweet potato (peeled and cut into 1/2 cubes, I like triangles better, but it makes no difference)
- 6 collard leaves (large, rinsed and large ribs removed, torn into 1/2" sections, I guestimated this to be about 2 cups)
- 1 1/2 cups brown rice
- 1 can black eyed peas (rinsed well and drained)
- 6 cups boiling water
- 1/2 tsp. cayenne pepper
- 1/4 cup tamari sauce
- 1 Tbsp. balsamic vinegar
