- 1 1/2 cups pumpkin puree (pure, I used home made but you can also use canned. Just make sure you use pure pumpkin puree, NOT the pie filling)
- 1 cup unsweetened applesauce
- 1/2 cup buttermilk
- 2 large eggs (lighty beaten)
- 1/2 cup egg whites
- 1/4 cup blackstrap molasses
- 1 Tbsp. white wine vinegar
- 1 tsp. pure vanilla extract
- 300 grams spelt flour
- 70 grams arrowroot flour
- 2 Tbsp. baking powder
- 1 Tbsp. baking soda
- 1/2 tsp. Himalayan salt
- 2 tsp. ceylon cinnamon (ground)
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. ground allspice
- 1/4 tsp. ground clove
- 1/4 tsp. ground cardamom
- 1 tsp. ground ginger
- 2 red apples (skin on, cut into small cubes, I used Spartan)
- 350 grams pumpkin (peeled and diced)
- 2 Tbsp. unsalted pumpkin seeds
- 4 scoops whey protein powder (vanilla flavored)
- 1/4 cup date paste
- 1/2 cup pumpkin puree (pure)
- 1/4 cup unsweetened applesauce
- 1/4 cup plain greek yogurt
- 2 Tbsp. coconut oil (unrefined, softened)
- 1/4 tsp. ceylon cinnamon (ground)
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. ground allspice
- 1/4 tsp. ground cardamom
- 1/4 tsp. ground ginger
