- 1 Tbsp. fine sea salt (for the pasta water)
- 1 cup calamata olives (pitted, drained, quartered lengthwise)
- 1 cup sun-dried tomatoes (drained, cut into ¼- by 1-inch julienne)
- 1 cup orange bell pepper (or chopped fresh red, yellow)
- 1/2 cup green onions (thinly sliced, about ½ bunch)
- 1/4 cup capers (drained)
- 4 cups chicken (shredded roasted, well seasoned)
- 1 1/2 cups mayonnaise (Best Foods, or other creamy, rich mayonnaise)
- 1/2 cup low-fat buttermilk
- 4 cloves garlic (pressed or minced)
- 1 Tbsp. fresh lime juice
- 1 Tbsp. chipotle chiles in adobo (sauce, finely minced, less if you don’t want the heat)
- 1 tablespoon Dijon mustard
- 1 tsp. salt (or to taste)
- ground black pepper (freshly, to taste)
