- 2 blocks extra firm tofu
- 2 Tbsp. cornstarch
- olive oil
- salt
- 2 broccoli (small, or 1 large head of, cut into florets)
- 2 red bell peppers (cut into strips)
- 1 1/2 cups rice (uncooked)
- 1/2 cup peanut butter
- 1/3 cup low sodium soy sauce
- 2 Tbsp. sesame oil (toasted or dark)
- 2 Tbsp. rice vinegar
- 2 Tbsp. sambal oelek (or chili paste, this is where the “spicy” comes in, so add to taste)
- 2 Tbsp. sugar (honey, or agave)
- 1 knob fresh ginger (peeled)
- clove (fresh garlic, peeled)

Easy to make. Very tasty. Added a roasted beet. Used green curry for the spice replacement.

Very solid and filling dish. The sauce is the best part and I'll definitely make it again if not the whole meal. I added onions to mine.
The only thing I would recommend is to double up on your vegetables as after the oven the serving size will be much less.

This recipe was so easy and delicious. The spicy peanut sauce made plain ol’ tofu extraordinary. I didn’t have chili paste or sambal oelek for the peanut sauce, so I used red curry sauce instead Also, I used powered ginger and garlic because I thought raw ginger and garlic might be too overpowering. And then I cut back on the sesame seed oil for the same reason. I will definitely make this again.

This recipe was lovely 😍. It was the first time I cooked tofu, but it turned out great. It was crsipy and tasty. The sauce was amazing and the leftovers taste as good as rhe first day. I will probably repeat.

Sauce is good next time need to do something to the tofu or use a different protein

This is one of the best recipes I have made. The baked broccoli and peppers are amazing and the peanut sauce is easy and fantastic.

Yum! 3x I’ve made it.
Added juice of 1 lime to the sauce. I also add shiitake mushrooms, zucchini, cauliflower, or whatever I have on hand to the roasted veggies. Delicious!

This was great! Next time I would use some parchment paper on the sheet pan under the tofu. The peanut sauce is awesome!!

Great sauce! My mom can’t stop talking about how much she likes it. And the roasted veggies complement the rice bowl well.
