- 1/2 cup natural peanut butter
- 1/2 cup coconut milk
- 1/4 cup low sodium soy sauce
- 1 lime
- 2 Tbsp. brown sugar
- 1 ginger (nub of, grated or minced)
- 2 tsp. chili garlic sauce (or to taste)
- 1 bunch cilantro leaves (about 1 cup, finely chopped)
- 1/3 cup peanuts (chopped, for topping)
- 4 cups shredded cabbage (or chopped, choice, I used a mix of napa and red)
- 2 kale leaves (generous handfuls, about 2 cups, preferably massaged ;-)
- 1 mango (ripe, peeled and roughly cubed)
- 4 Tbsp. olive oil
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. red wine vinegar
- 2 tsp. honey
- 1/2 tsp. celery seed (optional)
