- 2 Tbsp. vegetable oil (divided)
- 1 small sweet onion (sliced)
- 2 jalapenos (chopped)
- 4 cloves garlic (chopped)
- 2 Tbsp. tomato paste
- 2 cups seafood stock (or use chicken stock)
- 3 Tbsp. habanero hot sauce (El Yucateco Marisquera Red Seafood, or more to taste, I used half the bottle!)
- 1 Orange (small)
- 1 tsp. ground cumin
- 1 tsp. dried Mexican oregano
- salt
- pepper
- 12 oz. noodles (dried, use fideo, vermicelli, or similar noodles)
- 1/2 lb. shrimp (peeled and deveined)
- 1/2 lb. scallops (large)
- 1/2 lb. mussels (scrubbed and debearded)
- chili flakes
- fresh chopped cilantro
- fresh squeezed lime juice
- hot sauce
