- 28 oz. diced tomatoes (preference for Pomi brand diced tomatoes)
- 1 onion (large, diced)
- 4 cups veggies (chopped, I use sweet potatoes cauliflower, red peppers, zucchini, carrots)
- 3 cups leafy greens (roughly chopped, like spinach or kale)
- 5 cloves garlic (chopped)
- 2 jalapeno (stemmed and seeded, chopped, omit if you don’t like spice or add more if you want more of a sting)
- 2 Tbsp. olive oil
- 1/2 inch fresh ginger (piece of, minced)
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. spice
- 1/2 tsp. ground turmeric
- salt
