  • 3 tablespoons oyster sauce
  • 2 tablespoons dry sherry
  • 2 tablespoons peanut oil
  • 1 pound lamb loin (boneless, trimmed, thinly sliced)
  • 2 red chilies (fresh long, seeded, thinly sliced)
  • 2 cloves garlic (thinly sliced)
  • 2 teaspoons ginger (grated)
  • 1 bunch broccolini (trimmed, halved)
  • 4 spring onions (trimmed, sliced)
  • 1/4 cup chicken stock
  • 12 ounces egg noodles (package fresh thin)

    Directions

    1. In a small bowl, combine oyster sauce and sherry.
    2. Heat half the oil in a wok or large skillet on high. Stir-fry lamb in two batches for 1–2 minutes until browned. Transfer to a bowl.
    3. Heat remaining oil in wok. Stir-fry chili, garlic, and ginger for 1 minute. Add broccolini, onions, and stock. Stir-fry 2–3 minutes until broccolini is tender.
    4. Return lamb to wok with sherry mixture and noodles, then stir-fry 1–2 minutes until heated through.
