Description
This is one of our most popular healthy Indian mince recipes. Easy to make and ready in under 30 minutes this spicy mince and rice dish is guaranteed to spice up any weeknight dinner. Not only diabetes friendly, it's also high in iron and dairy free.

- 1 Tbsp. canola oil
- 1 large onion (finely diced)
- 2 cloves garlic (peeled, chopped)
- 1 Tbsp. fresh ginger (grated)
- 400 grams lamb mince (lean)
- 2 tsp. curry powder
- 2 tsp. Garam Masala
- 1/2 tsp. chilli powder
- 1/2 tsp. whole cloves
- 1/2 tsp. ground cinnamon
- 2 bay leaves
- 4 whole cardamoms (crushed, optional)
- 1 cup basmati rice (or long-grain)
- 400 grams chopped tomatoes (in juice)
- 2 cups chicken stock (liquid)
- salt
- pepper
- toasted slivered almonds
- currants
- fresh coriander (chopped, optional)
