- 2 tsp. ground cumin
- 1 tsp. ancho chile powder
- 1 lb. firm tofu (extra-, drained and pressed at least 30 minutes, then cut into 1/2 inch cubes)
- 1 cup cornmeal
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/3 cup vegetable oil (1/4 to, canola or another high smoke point oil)
- 2 avocados (ripe, pitted and peeled)
- 1/4 cup chopped fresh cilantro (finely)
- 3 Tbsp. lime juice
- 1 medium tomato (seeded and diced)
- 1/2 red onion (medium, diced)
- 1 jalapeño pepper (seeded and minced, optional)
- 1 garlic clove (minced)
- salt
- pepper (to taste)
- 4 sandwich rolls (6-inch, sliced open)
