- 2 Tbsp. soy sauce (I used low sodium)
- 1/2 lime (zested)
- 1/4 cup coconut milk
- 1 Tbsp. chopped fresh basil leaves
- 2 Tbsp. vegetable oil

Wonderful! Only used 1 jalapeño, being cautious, will use both next time. Tossed the white of the cebollitas into the marinade. Might try a little less soy sauce, strong flavor. Fried white corn tortillas. Added pepper jack cheese and sour cream. Cooked the shrimp in a skillet and simmered in the marinade. Only used 2 mangos and it was plenty. Wonderful flavors, look forward to it being more spicy next time.

Delicious! So fresh and light! Will definitely be a favorite when we’re in the mood for a healthy, light, fabulous dinner! Thanks for the tip for separating the lettuce leaves!
