- 3 Tbsp. refined coconut oil
- 1/2 tsp. cumin seeds
- 2 cinnamon sticks (small)
- 2 cardamom pods
- 1 onion (medium, sliced)
- 6 cloves garlic (crushed)
- 1 inch ginger (piece of, crushed)
- 1 green chili pepper (slit or chopped, for more heat)
- 2 small tomatoes (chopped)
- 2 tsp. tomato paste (optional)
- 1 small potato (peeled and cubed, then placed in a bowl of water to prevent oxidation/browning)
- 1 green bell pepper (small, cubed)
- 1 1/2 tsp. salt (or to taste)
- 1 tsp. coriander powder
- 1/2 tsp. cumin powder
- 1/2 tsp. turmeric powder
- 1/4 tsp. black pepper
- 1 tsp. chilli flakes (depending on how spicy you'd like it)
- 1/4 cup yogurt
- 14 oz. full fat coconut milk (good quality)
- 1/4 cup cilantro leaves (chopped)
- 1 tsp. lemon juice (freshly squeezed, optional)
