- 1 tsp. baking soda
- 1/4 tsp. kosher salt
- 1/4 tsp. fresh ground black pepper
- 2 Tbsp. oil (I used rice bran oil, but any oil with high smoke point will work, divided)
- 10 oz. button mushrooms (thin sliced)
- 2 inches ginger (piece of, minced)
- 2 cloves garlic (minced)
- 4 scallions (chopped)
- 8 cups beef stock
- 1/3 cup low sodium soy sauce
- 2 Tbsp. sambal oelek (fresh ground chili paste)
- 2 Tbsp. fish sauce
- 2 Tbsp. granulated sugar
- 2 bunches baby bok choy (about 1/2 pound, chopped)
- 1/2 lb. snow peas (sliced in half if large)
- 1 cup grape tomatoes (halved)
- 4 oz. rice noodles (thin, prepared according to package directions)
