- 250 grams chinese cabbage (coarsely chopped, about ¼)
- 1 bunch baby bok choy (quartered)
- 200 grams rice noodles (thick)
- 500 grams cooked chicken breasts (thickly sliced)
- 1 cup vietnamese mint (each of loosely packed, and coriander leaves)
- 1/2 onion (coarsely chopped)
- 2 cloves garlic (finely chopped)
- 1 Tbsp. coriander leaves (coarsely chopped, stalks and roots)
- 2 tsp. ginger (finely grated)
- 3 red chillies (small, coarsely chopped)
- 1 lime (finely grated rind and juice only)
- 2 tsp. lemon grass (finely chopped)
- 1 tsp. shrimp paste
- 1 tsp. ground coriander
- 1/2 tsp. ground turmeric
- 100 mL vegetable oil
- 50 grams red chillies (small, coarsely chopped)
- 50 grams garlic cloves (coarsely chopped)
- 50 grams ginger (coarsely chopped)
- 50 mL vegetable oil
- 2 Tbsp. vegetable stock powder
- 1 tsp. fish sauce (each of, and soy sauce)
- 1 tsp. brown sugar
- 1/2 tsp. chilli flakes
