My mom made these recently and they were amazing! I'm definitely going to make these myself soon! The spicy mustard/mayo sauce really gives it flavor.

I made this 3 times because I had trouble getting it out of the glass jar I used. The 2nd time I added truffle oil to the inside of the glass & I still had trouble. The 3rd time was a charm as I put it in a pliable plastic container! I may have packed the ingredients in too tight or it was my order of placement as I put the rice in first because I couldn't find the recipe again after seeing it. I used zucchini in place of the cucumber with basil leaves when I ran out of cucumber, I used salsa in with my avocado & replaced the shrimp with crumbled up smoked salmon. It was delicious!
