Roast chicken does double duty when leftovers become a main dish salad the next day with the addition of black beans, tomatoes and corn. Cat Cora's Roasted Cumin Vinaigrette adds lively flavor to the salad.

- 1/4 cup olive oil
- 3 Tbsp. cider vinegar
- 2 tsp. grated lime peel
- 1 Tbsp. fresh lime juice
- 2 tsp. cilantro (McCormick Gourmet™)
- 1 tsp. cumin (McCormick Gourmet™ Organic, Roasted Ground)
- 1 tsp. Dijon mustard (French's®)
- 1/2 tsp. garlic powder (McCormick Gourmet™ Organic)
- 1/2 tsp. sea salt (McCormick Gourmet™ Sicilian)
- 1/4 tsp. black pepper (McCormick Gourmet™ Organic, Coarse Ground)
- 1/4 tsp. cayenne pepper (McCormick Gourmet™ Organic)
- 12 oz. cooked chicken (cut into thin strips, about 3 cups)
- 8 oz. cherry tomatoes (quartered)
- 15 oz. black beans (drained and rinsed)
- 1/2 cup red bell pepper (chopped)
- 1 cup corn kernels (fresh canned)
- 10 oz. romaine lettuce (torn)
- 1/2 cup chopped red onion

Directions
- For the Vinaigrette, mix all ingredients in small bowl with wire whisk until well blended
- For the Salad, toss all ingredients except lettuce in large bowl until well mixed. Add vinaigrette; toss gently until well coated. Divide lettuce among 6 plates. Top each with about 1 cup of the bean salad
